Ishidaya traces its name back to Yoshinosuke Ishida, a Meiji-era cavalryman and hunter who opened a restaurant under this name in Yaizu, Shizuoka, a port town known for its seafood landings. The current owner, Takahiro, is the third generation to run the business and renamed the Hanoi restaurant "The 3rd Generation Ishidaya" to mark that lineage.

The menu is built around Edomae sushi, with seasonal ingredients and a pairing list that includes sake alongside wine and champagne. Dishes change with the season and what's available from suppliers, so the exact lineup on any given night depends on sourcing rather than a fixed set menu.

Seating is counter-only in the main dining area, which is non-smoking, plus a private room where smoking is permitted. The restaurant is on the second floor at 8A Hàng Cháo, in the Ô Chợ Dừa / Cát Linh area of Đống Đa district. Dress code is smart casual; overly casual attire is not allowed. Children can be accommodated if the restaurant is told their number and age in advance, though no kids' menu or baby food is prepared.

Ishidaya serves both lunch and dinner. Lunch runs from 12:00 to 14:00 with last orders at 13:00, and dinner from 18:00 to 22:00 with last orders at 21:00. The restaurant is closed on Mondays. Reservations can be made by phone or through the restaurant's website.
