Kuzushi Kotowari opened in October 2021 in Shimogyo Ward, a five-minute walk from Gojo Station on the Kyoto Municipal Subway's Karasuma Line. The restaurant offers a single dinner course, priced at 8,800 yen including tax, that changes monthly to follow seasonal ingredients from Kyoto and the chef's native Mie Prefecture, including Kyoto vegetables, hamo and ayu.

The course moves through a palate-cleansing starter, five small seasonal appetizers, sashimi dressed with house-made soy sauce, a main "kuzushi" dish built around fish, meat or vegetables, a vinegared palate-refresher, a rice course, and a dessert. A notable extra, not included in the set course, is foie gras nigiri (two pieces for 800 yen), sautéed in Japanese dashi and topped with grated daikon.

Seating totals 16: a 10-seat counter on the first floor facing the open kitchen, and a tatami room on the second floor that seats up to six and is intended for private bookings of four or more guests. The restaurant pours around eight sake selections that rotate seasonally, including Ine Mankai from Tango, plus more than 20 wines by the glass or bottle.

Service runs in two seatings, 18:00 and 20:30, most evenings; the restaurant is closed Wednesdays and on the last day of each month. There is no English menu. Credit cards (VISA, Mastercard, AMEX, JCB, Diners) and PayPay are accepted; the restaurant is not cash-only. No on-site parking is available, though coin parking can be found nearby.
