Sushi Jubei sits on a residential block of Bunkyō in Fukui City, offering a full-course Edomae sushi omakase priced at 28,600 yen per person. The course runs 18 dishes, served at both lunch (12:00–14:00) and dinner (18:30–21:00) seatings, Monday through Saturday; the restaurant is closed Sundays and has occasional irregular closures.

Reservations are required and accepted only through TableCheck, Pocket Concierge, Ikyu, or by phone — no other booking platforms are honored. Phone and TableCheck bookings open up to two months ahead of the same date, with TableCheck specifically capped at 60 days out. Same-day diners may book up to three months ahead for a future visit. On the first of each month at 10:00, a small number of dinner seats for the following month are released on TableCheck, a workaround for guests who find the standard window closed.

Seating is tight and demand is high, placing this among the harder reservations to secure in the region. Phone inquiries should be made outside service hours, between 10:00–12:00 or 14:00–18:00. Children of elementary school age or younger are not accommodated. Guests are asked to arrive on time; doors open ten minutes before the seating begins, and being more than 30 minutes late without contact may result in cancellation. Same-day cancellations or changes to party size incur a 100% charge of the course price. Photography of the food is permitted, provided other guests are not captured in frame.
