Sushi Kashiba sits just off Pike Place Market in downtown Seattle and serves Edomae-style sushi at a counter-only setup. Chef Shiro Kashiba, a three-time James Beard Award nominee for Outstanding Chef, has worked in Seattle for more than five decades and is credited by local press with training many of the city's other sushi chefs.

Service runs in three nightly counter seatings at 5pm, 7pm and 9pm. A limited number of seats at each seating can be reserved in advance through OpenTable; remaining seats are first come, first served and can be claimed in person during business hours on the day of the visit. Doors open at 5pm. The restaurant is closed on Tuesdays; all other days run from 5pm, with closing times at 9:30pm on Friday and Saturday and 9pm the rest of the week.

Pricing falls into the luxury tier, consistent with a chef-led omakase counter. As of April 1st, the restaurant removed its automatic 20% service surcharge and returned to standard tipping, except for parties of five or more, where the surcharge still applies.

The restaurant is located at 86 Pine St, Ste 1, within walking distance of Pike Place Market, making it a convenient stop for visitors already in the downtown core. Reservations and same-day availability should be confirmed directly with the restaurant, as counter seating is limited and demand around market hours can be high.
