Sushi Mori Gaku sits on Kiyamachi-dori in Kyoto's Nakagyo Ward, a counter-only sushi restaurant with eight seats. Chef Masakazu Inoue, who has more than three decades of experience in Japanese cuisine, prepares an omakase course of nigiri and seasonal dishes using ingredients sourced daily from markets, including seafood from his hometown of Maizuru.

The counter is built around a straw-roasting (warayaki) station, so diners watch fish seared over open flame before it is served. Lunch omakase is priced at 13,000 yen; the dinner course runs 20,000 yen per person. Kyoto vegetables often appear alongside the fish, reflecting the restaurant's seasonal, local sourcing.

Reservations are required — walk-ins are not accepted — and are best made by phone at 075-741-8127. The restaurant is closed on Wednesdays and runs two lunch and two dinner seatings most other days, with dinner service split between 18:00–20:00 and 20:30–22:30. There is no on-site parking; nearby paid lots are the alternative.

The restaurant accommodates celebrations and business entertaining, and has said it can arrange small surprises for anniversaries or birthdays if arranged in advance.
