Tsukiji Sushi Omakase sits a seven-minute walk from Tsukiji station in Chuo City, Tokyo. The counter is run by chef Kenshiro Azuma, who trained for 18 years at an established Edomae sushi, fugu, and Japanese cuisine restaurant before becoming an instructor at Tokyo Sushi Academy and later setting up sushi operations in Guangzhou and Hong Kong. He has taught roughly two thousand students; at the restaurant he prepares the omakase himself or delegates to a chef he has selected, and guests can request him by name when booking, subject to his schedule.

The lunch omakase runs ¥6,600 and includes 22 items, described as 14 nigiri pieces plus palate-cleansing courses between them. Dinner offers two set menus: the Ai course at ¥11,000 (tax included, service charge separate), built around Edomae technique and aged fish using the Tsumoto method of blood-letting, and the Yuu course at ¥16,500 for 26 pieces of sushi. Menus change monthly based on seasonal ingredients, with fish sourced nationwide, including from Hasegawa Suisan, known for the Tsumoto method.

The restaurant is open daily for lunch from 12:00 to 13:30 and dinner from 16:00 to 21:30, though a schedule change is planned from February 2026, with lunch starting at 12:00 and closing by 14:30, and dinner starting at 16:30. Reservations are handled through TableCheck. A sister location operates in Kagurazaka.
