Sushi Matsuura sits down a side street off the main Nishi Chaya walking district in Kanazawa, one of the city's three historic geisha quarters. The eight-seat counter is built around old storehouse doors and fixtures, giving the small room a quieter, older feel than its 2025 opening date suggests.

Chef Junichi Matsuura, born in Yokohama in 1971, spent 23 years working sushi counters in New York for high-end Japanese restaurants before returning to Japan in 2018. His training traces to Toshio Saito of the Akasaka restaurant Sushisho Saito, with additional time spent under Tsutomu Sono of Kappo Sono. Matsuura later ran the kitchen at the Kizahashi restaurant inside The Hotel Sanraku Kanazawa before opening his own counter. He places particular emphasis on tuna selection.

The restaurant runs both lunch and dinner omakase, with an English menu available. Seating is counter-only and reservation-only; the restaurant is closed on Wednesdays. Groups of up to eight can be accommodated, though parties of five or more must call ahead by phone rather than book online. Payment is by cash or credit card, with a 10% service charge added to the bill; there are no children's chairs or menus.

From October 19, 2026, pricing moves to 11,000 yen for the lunch course and 16,500 yen for dinner, both before tax and service. The current dinner price per person is 16,500 yen. Lunch service runs 12:00 to 14:00 and dinner 18:00 to 22:00 most days, with Monday offering dinner only.
