Sushi to Nihon Wine AO occupies the ground floor of the Saikou Building in Katamachi, Kanazawa, near the Saigawa riverside. The restaurant is built around a six-seat counter, with a private room and table seating also available for groups and celebrations; partitions can be removed for parties of up to 18.

Dinner is offered as three set courses: ¥11,000 for a straightforward nigiri-focused menu, ¥14,300 for a standard course balancing nigiri and cooked dishes, and ¥22,000 for the top-tier omakase using the day's best ingredients. Lunch runs three tiers as well, at ¥6,600, ¥8,800, and ¥11,000, with nigiri paired with seasonal appetizers and cooked dishes in the higher courses. All prices are tax included. The kitchen draws on seafood from Kanazawa port and vegetables from the Noto and Kaga regions, prepared using Japanese culinary technique alongside sushi.

A signature dish, uni-guro maki, combines charcoal-seared nodoguro (blackthroat seabass) with fresh sea urchin in a hand roll; it has been served since the original shop opened in 2017 and currently appears on the anniversary course. The restaurant also stocks Japanese wine from roughly ten domestic wineries, offered by the glass or as a pairing alongside sake.

The restaurant has an English menu, accepts reservations through TableCheck, and asks for smart casual dress. It is open for lunch and dinner Monday, Tuesday, and Thursday through Sunday, and closed Wednesdays.
