Dai serves kaiseki-style omakase in central Toyama, at 6-7 Ōtemachi. The kitchen draws on spring water carried from the Jōyama foothills, used throughout the cooking. The menu runs roughly ten courses, changing with the season rather than following a fixed banquet format, and each course concludes with dessert.

Four course options are offered across lunch and dinner. Lunch service (12:00–14:00, last entry 13:00) is priced at 9,680 yen or 13,310 yen; dinner service (18:00–20:30) runs 13,310 yen or 18,150 yen, with all prices inclusive of tax and service charge. The restaurant seats 20 total, split between a 10-seat counter and private rooms (one for 10, one for 4), so both counter dining and private-room reservations are possible.

Dai is closed Sundays, the first Monday of the month, and Monday lunch. Reservations are required and can be made by phone, through Tock (TableCheck), or via Pocket Concierge; the restaurant has stated it cannot accept booking requests sent through Instagram direct messages. A same-day cancellation incurs a charge equal to the full course price, so confirming attendance before the reservation date is advisable. As of a March 2025 notice, boxed-lunch (bento) sales were on hold beyond October, so diners planning around that offering should confirm current availability directly with the restaurant.
