Ken Sushi sits on Geldersekade in Amsterdam-Centrum, open Wednesday through Sunday from 17:00. The restaurant runs two seatings a night, at 17:30 and 20:30, across three differently shaped counter rooms named Lapu, Tako and Koi. Seating totals 20, all at the counter, with a private room option for the right group size.

Chef Ken builds his omakase around Japanese technique with his own additions, using vinegared rice served at 37°C and seafood chosen by daily and seasonal availability. Two menus are offered: the standard Omakase Experience, available Wednesday to Sunday, and the Omakase Advanced, which replaces it in the Lapu room on the first and third Friday and Saturday of each month. Average dinner pricing runs around €87 per person for the two menus combined, with a listed per-person price of €80; drinks and any menu extensions are settled separately on the night.

The restaurant does not offer an English menu, so explanations of ingredients and preparation are given verbally during service rather than in print. Reservations are made through an online booking system on the restaurant's website, which opens precisely six weeks ahead for each date; the restaurant notes it is often fully booked well in advance. A phone number is also listed for questions not covered online. Prepayment of the menu price is required at booking to secure the seat, and the restaurant asks that diners arrive within 30 minutes of the seating start, after which service becomes limited.
