Luna Omakase occupies a 12-seat counter on the ninth floor of Liverpool Street Station in London. The menu runs 12 courses, built around Sosaku-style Edomae sushi that pairs traditional techniques like ageing, curing and marinating with more inventive touches. Chef Leonard Tanyag, who trained in Yamanashi, Japan and has worked in Japanese kitchens internationally, oversees the counter, with the menu changing as ingredients and seasons shift.

Dinner costs £230 per person, paid in full at the time of booking and inclusive of service charge; this covers the food only, not drinks unless a pairing is pre-booked. Seatings run Tuesday to Saturday: 7pm on Tuesdays and Wednesdays, and 6pm or 8:30pm on Thursdays and Fridays. Each sitting lasts about two hours, with all guests served together once doors close, so arrival 30 minutes ahead is expected and late entry isn't possible.

The kitchen is gluten-, nut- and celery-free, but cannot accommodate other allergies or vegetarian and vegan diets, since the menu is largely raw and cooked fish and shellfish. Reservations are phone-based or by concierge introduction, and guests must be 14 or older. Cancellations or changes inside 72 hours incur a full charge; earlier changes carry a £50 handling fee.
