Sanshin is a counter-only sushi restaurant in Chuo Ward, Osaka, set in a converted traditional row house near Osaka Castle. Chef Yoshitaka Ishibuchi, who trained for 21 years in Osaka before opening the restaurant in 2016, works an eight-seat counter and serves lunch only, across two seatings at 11:30 and 14:00, Monday through Saturday.

The omakase is priced at 30,800 yen per person and changes with seasonal availability and market sourcing; the chef makes daily market visits and sources fish directly from ports around Japan. The restaurant does not offer an English menu, and dress code is smart casual. There is no private room, but a small tea room next door, called Tokiya, is available for guests to relax in before their seating or over a sweet after the meal.

Booking is considered hard. Online reservations run through Omakase.in, with each month's full calendar opening at 8:00 a.m. JST on the first of the prior month. Tabelog may also carry occasional availability. Guests booking from outside Japan are directed toward TableAll rather than the Japanese-language phone line. Phone reservations open exactly one week ahead, at 5:00 p.m. JST, on a first-come basis, and the restaurant posts the following month's phone-booking dates once, at month's end, via its Instagram Stories.

Sanshin holds a Tabelog Award recognition and is not currently listed by Michelin. Payment accepts cash and credit cards; electronic money and QR payments are not accepted. The venue asks guests to avoid wearing perfume, and requires guests to be 18 or older.
