Sushi Hil sits on Main Street in Vancouver's Riley Park–Little Mountain area, inside what the neighborhood calls its Michelin Mile. Chef Hilary Nguy, who began his sushi career in 2003 at Kitsilano's Temaki Sushi, opened this intimate counter in 2022 after two decades of training, and the Edomae-style sushi reflects that focus: ingredient-driven, precise, and pared down rather than showy.

The restaurant runs both a lunch and dinner omakase, open Monday through Saturday with a midday seating from 11:30am to 2:30pm and an evening seating from 5pm to 9:30pm; it's closed Sundays. Pricing sits in the moderate tier, making the lunch service a more accessible way to try Chef Hil's cooking than a typical dinner-only omakase counter.

Sushi Hil is Michelin listed, and has been recognized as a MICHELIN Bib Gourmand restaurant. It has also been ranked among Canada's 100 Best Restaurants and named Best Sushi and Gold for Best Japanese at the Vancouver Magazine Restaurant Awards. Reservations are handled through Tock, which is the only listed booking channel — walk-ins aren't part of the standard process described by the restaurant. The address is 3330 Main St, and the restaurant can also be reached by phone for questions ahead of a visit. Chef Hil has paused his bespoke catering service to concentrate on the counter, with a new commissary for catering said to be in the works.
