Sushi Ino sits on the third floor of the MITSUWA320 building in central Matsuyama, a short way from Nibanchō. The restaurant is built around a single ten-seat counter, with no table seating, and the whole space is non-smoking.

Chef Yusuke Ino sources much of his fish and produce from Ehime, supplementing it with seasonal ingredients brought in from elsewhere in Japan. The format is Edomae-style omakase, served both at lunch and dinner, with the kitchen working directly in front of the counter seats.

A meal runs to roughly ¥18,700 per person, placing it in the upscale tier locally. Beyond sushi, the drink list covers beer, shochu, sake, umeshu, whisky, wine, and champagne, along with non-alcoholic options.

The restaurant is open for lunch from 12:00 to 14:00 and for dinner from 18:00 to midnight, every day except Monday. Reservations are required, and the restaurant enforces a cancellation policy: fifty percent of the bill if you cancel two days ahead, and the full amount for cancellations made the day before or on the day itself.
