Sushi Shinonome occupies the second floor of the Season Building in Chuo Ward, Sapporo, a counter-only Edomae sushi restaurant at the luxury price tier. The name references both the pre-dawn sky over Higashikawa, the chef's hometown near the center of Hokkaido, and a neighborhood there called Shinonome. Higashikawa has no municipal water supply; its rice paddies and residents depend on natural water filtered through the Daisetsuzan mountains, and the chef's family has farmed rice there for generations. That rice forms the base of the shari served at the counter.

Seafood is sourced both locally and from other regions of Japan, paired with the rice so that the sushi and accompanying dishes stay simple rather than heavily seasoned. The restaurant frames sushi as a shared national culture meant for local and visiting diners alike, and is listed as English friendly.

Reservations run through TableCheck, linked from the restaurant's website. Diners are asked to avoid perfume, contact the restaurant ahead about allergies or disliked ingredients, and inquire in advance before bringing children. Same-day cancellations or changes to party size are charged in full, and cancellations the day before are charged at 50 percent; starting April 2026, cancellations two days ahead will also carry a 50 percent charge. Phone calls may go unanswered during service, so questions are best sent via Instagram direct message to the restaurant's account, wataru_nakahara.

Sushi Shinonome is open Tuesday through Monday, 17:00 to 22:30, closed Thursdays, at Minami 1 Jonishi, 22-chome, in Chuo Ward, Sapporo.
