On the fifth floor of the Zō Building in Kobe's Kitano area, Sushi Sugisaki runs a single-row counter seating seven, with an eighth seat available for private bookings. The room is built around a solid Yoshino cypress counter and earthen walls, a quiet setting for an Edomae omakase built from Hyogo seafood, particularly Akashi and Awaji catches, alongside a seasonal highlight such as summer's Yura red sea urchin.
A sushi chef with more than thirty years of experience works alongside the owner, who holds a certified sake sommelier qualification, and pairs each course with sake selected to match the fish. The rice vinegar is a house blend of red and rice vinegar with no added sugar, and the rice itself is chosen season to season. Lunch omakase starts at ¥16,000 and dinner at ¥18,000, both before drinks, with no à la carte menu.
Reservations are taken by phone or through TableCheck online booking, and lunch bookings need to be made by the day before service due to sourcing. Seating runs about two hours, and reservation times are centered on 18:00, 18:30, and 20:30 for dinner since the kitchen is not on a single-seating system. Cancellations or changes require three days' notice; same-day cancellations or no-shows are charged the full course price. Smart casual dress is requested, along with avoiding strong perfume and removing watches or jewelry that could mark the counter. The restaurant has no parking of its own.
