Torii Shigeru sits on Am Kaiserkai in HafenCity, between the Elbphilharmonie and the Speicherstadt. The restaurant serves a single fixed menu: a 20-course Edomae-style omakase built around small opening dishes, sashimi, nigiri, a grilled course, tamago, soup and a sweet finish. The lineup changes with season and catch, decided nightly by the chef, and there is no à la carte option and no vegetarian or vegan alternative.
Chef Shigeru Fujita has worked in Japanese cuisine for more than 23 years, with experience in Japan, Germany and Spain. He works the counter himself each service, handling aging, marinating, kombu-curing and house-made sauces in front of guests.
Seating is limited to 12 at the counter, with two sittings each open night at 17:30 and 20:00, Tuesday through Saturday. A private dining room is available separately for up to 10 guests with its own menu, arranged by direct inquiry. The counter menu runs about 105 minutes and costs 185 euros per person. Dress code is smart casual, and reservations are recommended well ahead given the small seat count. Guests with severe fish or shellfish allergies, or gluten intolerance and celiac disease, cannot be accommodated, since the menu uses soy sauce and miso; other allergies should be flagged when booking.
