Tucked into the first floor of the Nakasu Central Building in Hakata Ward, this restaurant seats only eight guests at a single white-wood counter. The room is simple, built around that counter, and the course runs roughly two hours from an 18:00 start.
Chef Ryuichi Ando trained with the Sushi Akazu Group and at Yufuin's well-regarded ryokan Mushoutsu (無量塔) before opening here. He prepares nigiri using akazu-seasoned rice alongside fish bought each morning from markets around the country. The single omakase course costs ¥22,000 (tax included) and typically runs 6 to 7 appetizer courses followed by 10 to 12 pieces of nigiri, finishing with a soba shime.
Drinks are included in the course price, with a short list of exceptions such as Champagne. The sake and shochu selection covers regional labels including Tanaka Roku-Go, Chiebijin, and Mii no Kotobuki, plus a whisky and bottled beer list. Guests with food aversions or allergies, including to the closing soba, are asked to notify the restaurant in advance so the chef can adjust the menu.
The restaurant is closed on Sundays, with occasional additional irregular closures; phone lines are not answered on closed days. It sits a six-minute walk from Exit 1 of Nakasukawabata Station on the Fukuoka City Subway, or an eleven-minute walk from the south exit of Nishitetsu Fukuoka (Tenjin) Station. Reservations are taken by phone only.
